ALOO PURI
Ingredients:

Whole wheat flour atta dough - for making puris
Potatoes - 4 nos. boiled and chopped
Tomatoes - 2 nos. and half inch ginger grinded into puree
Turmeric powder - 1/2 tspn
Red chilly powder - 1 tspn
Garam masala - 1/2 tspn
Dry mango powder - 1 tspn
Coriander powder - 1 tspn
Cumin seeds - 1 tspn
Cloves - 2 nos.
Coriander leaves - 1/4 cup finely chopped
Salt - to taste
Oil - for tempering and for frying puris

Method:

1. Take a pan and add oil.
2. Once oil is heated, add cumin seeds and cloves.
3. Add tomato ginger puree and saute well.
4. Once the oil is started separating from sides, add
turmeric powder, red chilly powder, coriander powder and
little salt. Mix well.
5. Add boil potatoes. Mix well. Add water to adjust the
consistency.
6. Add garam masala and dry mango powder. Add salt if
required.
7. Cook well for 2-3 mins.
8. Garnish with coriander leaves.
9. Roll out puris from the dough and deep fry them.
10. Serve hot with tangy and spicy aloo sabzi.
