Sev Puri (Especially for Diabetic people)

Serves - 4
Ingredients:
Puris - 250 gms Wheat flour puris/papdis (Baked or fried)
Sev - 250 gms
Sweet Potatoes - 2 medium size (boiled, peeled and chopped)
Tomatoes - 2 medium sized chopped
Onions - 2 medium sized chopped
Chat masala - 1 tspn
Salt - as per taste
Coriander - for garnish
For Sweet chutney:
Black Dates - 12-15 seeds
Tamarind - lemon size
Jeera powder - 1/2 tspn
salt - a pinch
Jaggery - optional
For Green chutney:
Coriander - 1 cup
Mint leaves - 1/2 cup
Green chillies - 4-5 (according to your taste)
lemon juice - 1 tspn
garlic pod - 1 or 2
salt - as per taste
Method:

Deseed the dates and soak them in 1 cup warm water with tamarind for 30 minutes.

Grind the dates and tamarind mixture with jeera powder and salt. Add little jaggery if you want. (I did not add as the sweetness of chutney was okay for me plus we are using sweet potatoes so I did not want to make it extra sweet).

Grind all the ingredients under green chutney with little water and keep aside.

Now your both chutneys are ready so start with assembling.

Arrange 6-7 puris in plate and top them with sweet potatoes, tomatoes and onions.

Sprinkle some salt and chat masala.

Top them with some green chutney followed by sweet chutney.

Now add sev on top of each puri.

Garnish with coriander leaves.
