Garlic Sev

Ingredients:

Besan or Gram flour - 2 cups

Garlic cloves - 10 to 12

Cumin seeds or Jeera - 1/2 tspn

Ajwain or carrom seeds - 1/4 tspn

Red chilly powder - 1 1/2 tspn

Turmeric powder - 1/4 tspn

Oil - 1 1/2 tspn

Asafoetida or hing - 1/4 tspn

Cooking soda - less than a pinch

Salt for taste 

Oil for deep frying

Method:

​

  1. Take a mixer jar and add garlic cloves, ajwain and jeera. Grind it all well with little water.

  2. Heat 1 1/2 tspn oil in a pan.

  3. Take besan or gram flour in a bowl. Add all dry spices and salt and mix well.

  4. Add the garlic paste to it.

  5. Pour hot oil to the flour and add cooking soda and mix everything well.

  6. Now knead soft dough using little warm water. 

  7. Heat oil in kadai or pan.

  8. Fill the sev mould with little dough.

  9. Press sev directly to the oil or you can press it on plate and then add to oil.

  10. Fry them on high flame only.

  11. Fry till crisp.
