Namkeen Shankarpali

Ingredients:

Maida or All purpose flour - 1/2 kg

Black Pepper - 1 tbspn Roughly crushed

Cumin seeds or Jeera - 1 tbspn Roasted and roughly crushed

Ajwain or Carrom seeds - 1/2 tspn

Oil - 2 tbspn

Salt for taste

Oil for deep frying

Method:

​

  1. Take Maida in a bowl and add pepper, ajwain, cumin and salt to taste.

  2. Heat 2 tbspn oil in a pan.

  3. Pour this very hot oil to the dry flour.

  4. Mix everything well with the use of a spoon.

  5. Knead the dough using little water. 

  6. Keep it covered for 1 hour.

  7. After an hour, make balls out of dough and start rolling single them into big chapati or roti.

  8. It should neither be too thick nor too thin.

  9. Cut out squares from it using knife or shankarpali cutter. 

  10. Meanwhile keep oil for heating.

  11. Deep fry the shankarpalis on medium flame till crisp.
