Ukdiche Modak/Steamed Modak Multicolour

Ingredients:


Freshly grated Coconut - 3 cups
Rice Flour - 3 cups
Jaggery - 2 cups
Cardamom powder - 1 1/2 tspn
Ghee - 1 tspn

Edible food colours of your choice
Salt to taste
Turmeric leaves - 2 or 3 (optional)

Method:

​

1. Heat a pan. Add a teaspoon of ghee and add freshly grated coconut to it. Saute for 2 mins.

​

2. Add jaggery and mix well. Cook till jaggery melts and mixture dries up.

​

3. Add cardamom powder and keep it aside.

​

4. In another pan take 3 cups of water and boil. Add salt to taste and add a teaspoon of oil or ghee.

 

5. When the water boils add rice flour to it and mix well and cover and cook for 2 mins and then switch of the flame and let it rest for 5 mins.

​

6. Now take the flour mixture in a plate and knead a soft dough out of it using little water if required.

​

7. Now make 4 parts of the dough and add colour to each part and knead well.

​

8. Now take small amount of dough from each colour and make a single ball out of it.

​

9. Roll out small puris from it and stuff the filling and make modaks.

​

10. Heat the steamer and keep it ready. Place few turmeric leaves in the steamer plate and grease them with little oil and place your modaks on them.

​

11. Steam for 15 to 20 minutes.

​

12. Serve with ghee.

​

NOTE :

 

Here the quantity of water to the rice flour I have taken equal since my rice flour was store bought and was bit coarse.
If you are using homemade rice flour or very fine one, you need to take 2 or 2 1/2 cups of water.

 

If you don't get turmeric leaves you can also use banana leaf.
