Bhajni Chakli
Ingredients:

For Dry roasting
Rice - 1 kg (Washed & sundried)
Chana Dal or Gram dal - 1/2 kg
Urad Dal - 250 gms
Moong Dal - 125 gms
Thick poha or flattened rice - 2 cups
Sago or sabudana - 100 gms
Jeera or Cumin seeds - 1/4 cup
Coriander seeds - 1/2 cup

For making chaklis
Bhajani flour - 4 cups
Sesame seeds - 2 tbspn
Turmeric powder - 1/2 tspn
Red chilly powder - 3 tbspn
Asafoetida or hing - 1/2 tspn
Oil - 1 tspn
Salt - as per taste
Oil - for deep frying

Method:

Dry roast all the ingredients which are mentioned in the dry roast section. Roast each ingredient separately till the colour changes a bit.

Grind it into fine flour at flour mill.

Take 4 cups of the flour in a bowl.

Add sesame seeds to it and mix well.

In a pan add 3 and half cups of water and heat it till boiling.

Add asafoetida, turmeric powder, red chilly powder and salt and mix well.

Add a teaspoon of oil.

Reduce the flame and add dry flour to the pan.

Mix properly and cover and cook for 2 mins.

Take the mixture in a big plate and let it cool.

Start kneading the dough and also keep oil for heating in a kadai or pan for deep frying the chaklis.

Fill small portion of dough in chakli mould and make chaklis.

Add to the hot oil and fry them on medium to high flame till crisp.

Let them cool for some time and then serve.
