Eggless Wholewheat Banana Cake (Vegan)

This banana cake recipe is tried and tested. It is very healthy as it is made of whole wheat flour. I have not added any nuts in it. I made it totally plain. You can add walnuts or any other nuts of your choice. You can also add chocolate chips to make the flavour more interesting. But I like the subtle flavour of cardamom which blends so well with banana. This cake is completely vegan.
This cake is liked by everyone in our family especially my father in law. He said its one of the best banana cakes that he has had. I many a times bake this cake specially for him.
The banana cake can be served plain as it is. You can also serve the cake slices with some whipped cream if you want or frost the cake with buttercream icing. Chocolate icing would also go very well. But at home we prefer it plain to go with the evening cup of tea or as a sweet dessert.

Ingredients:
Whole wheat flour - 1 cup
Powdered sugar - 1/2 cup
Oil - 1/4 cup
Baking Powder - 1 tspn
Baking soda - 1/2 tspn
Ripe Bananas - 4 nos. Pureed (over ripped bananas go best for the recipe)
Cardamom powder - 1 tspn
Butter for greasing the cake tin.
Method:
[if !supportLists]1. [endif]Mix whole wheat flour, baking powder and baking soda and sieve them
together.
[if !supportLists]2. [endif]In a separate mixing bowl add oil and powdered sugar and whisk it.
[if !supportLists]3. [endif]Add pureed banana and cardamom powder.
[if !supportLists]4. [endif]Add flour little by little in cut and fold method. Mix until all flour incorporates
well in a thick batter. (Do not over mix).
[if !supportLists]5. [endif]Bake at 180 degree Celsius for 20 mins.
Notes
Depending on the temperature in your oven and the size of your pan, the cake might take less or more time than mentioned here. The temperature varies from oven to oven. So take your call and keep an eye. I prefer baking without oven, in pressure cooker of any other vessel. It gives a better taste rather than baking in oven. The benchmark is that a tooth pick inserted in the cake should come out clean and the cake should get brown crust from side and top. The browning of the cake gives it a nice flavour.
