Sev Puri (Especially For Diabetic people)

Hi! friends. I know my blog is named sweet delights. But you will also find here few savoury recipes. Today I am going to share a very wonderful chat recipe. My favourite and it's also super favourite among all my family members. It's Sev puri. Sev Puri is a famous street food chat of Mumbai. I miss those yummy puris topped with mouthwatering chutneys and sev which I used to have in Mumbai. Here in Bangalore, I really miss those wonderful sev puri moments. I tasted Sev Puri at many food joints in Bangalore but didn't liked the taste at all. I decided to make it at home and really it was so good to sit at home and relish on those puris.
I have made Sev puri ample number of times but today the recipe which I am sharing is a healthy version of it. It is sugar free and also has 30% less cholesterol in it. I always wanted to serve healthy to my family and finally zeroed on this recipe. I have not used regular potatoes in it instead I substituted it with sweet potatoes. They are excellent source of Vitamin A, Vitamin C, Vitamin B6, manganese, potassium, etc. They do not cause blood sugar spike and which is the main reason I thought of using them in this recipe. Again, here I have used black dates which are very good source of iron, copper, vitamins, sulfur,etc. They aid in digestion. The dietary fiber in it reduces bad cholesterol in the blood. This leads to balance in blood sugar levels and is perfect for diabetics. Puris also I have used wheat flour ones instead of maida puris. You can also used baked puris to make it much more healthy.

Preparation Time - 30 - 40 mins
Assembling - 10 mins
Serves - 4
Ingredients:
Puris - 250 gms Wheat flour puris/papdis (Baked or fried)
Sev - 250 gms
Sweet Potatoes - 2 medium size (boiled, peeled and chopped)
Tomatoes - 2 medium sized chopped
Onions - 2 medium sized chopped
Chat masala - 1 tspn
Salt - as per taste
Coriander - for garnish
For Sweet chutney:
Black Dates - 12-15 seeds
Tamarind - lemon size
Jeera powder - 1/2 tspn
salt - a pinch
Jaggery - optional
For Green chutney:
Coriander - 1 cup
Mint leaves - 1/2 cup
Green chillies - 4-5 (according to your taste)
lemon juice - 1 tspn
garlic pod - 1 or 2
salt - as per taste
Method:
Deseed the dates and soak them in 1 cup warm water with tamarind for 30 minutes.
Grind the dates and tamarind mixture with jeera powder and salt. Add little jaggery if you want. (I did not add as the sweetness of chutney was okay for me plus we are using sweet potatoes so I did not want to make it extra sweet).
Grind all the ingredients under green chutney with little water and keep aside.
Now your both chutneys are ready so start with assembling.
Arrange 6-7 puris in plate and top them with sweet potatoes, tomatoes and onions.
Sprinkle some salt and chat masala.
Top them with some green chutney followed by sweet chutney.
Now add sev on top of each puri.
Garnish with coriander leaves.
